Taco Stuffed Sweet Potato

sweet potato taco with avocado salsa and side salad

Ingredients:

• 4 sweet potatoes, baked

• 1 lb ground meat of choice, browned

•taco seasoning

•can of black beans, rinsed & drained

•tomatillo + avocado salsa (recipe below)


Bake sweet potatoes, brown & season meat with taco seasoning, rinse & drain beans. To assemble, slice sweet potato down the middle, scoop on meat and beans, and then top with a generous amount of tomatillo & avocado salsa. The salsa on top makes it so don’t skip it! I like to serve this meal with a simple side salad for some added veg & freshness! Enjoy!

Ingredients:

• 4 tomatillos, husked, rinsed and coarsely chopped

•¾ cup fresh cilantro

• 2 ripe avocados, halved, pitted and peeled

•½ onion, coarsely chopped

•½ jalapeño pepper, more or less depending on spice level preference

• 2 cloves garlic, peeled and halved

• Juice of 1 lime

• 1 teaspoon ground cumin

• 1 teaspoon salt


Combine & blend!
